½ lime, juiced
1 garlic clove
2 oz plain yogurt

Pasta Salad:
9 oz fusilli pasta
4 small zucchini
2 oz sweet corn
2 oz kalamata olives
2 oz PEPPADEW® Sweet Juanita Peppadrops
Handful cherry tomatoes
½ red onion, chopped
A fresh, vibrant pasta salad with zucchini, sweet corn, olives, and PEPPADEW® Sweet Juanita Peppadrops, tossed in a creamy herb dressing. Perfect for summer lunches or light dinners.
Method
1 Cook fusilli pasta according to package directions. Drain, cool, and set aside.
2 Make the dressing: blend cilantro, parsley, lime juice, garlic, yogurt, olive oil, and maple syrup until smooth. Season with salt.
3 Slice zucchini and lightly pan-fry until golden (a few minutes per side).
5 Combine pasta, zucchini, PEPPADEW® Sweet Juanita Peppadrops, sweet corn, olives, onion, and tomatoes in a large bowl. Toss with dressing and garnish with extra herbs.
