  • 2 cups cooked chickpeas drained and rinsed).
  • 1 cup fresh breadcrumbs
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh oregano
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp lemon juice
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • ½ cup PEPPADEW® Sweet & Spicy Juanita Piquanté Peppers, finely chopped
  • 1 tbsp olive oil (for frying)

A simple and flavorsome fiber-filled dish for weekday lunches or dinners. Made with canned chickpeas, breadcrumbs, Italian spices and smoky paprika. The PEPPADEW® Red Juanita Piquanté Peppers add colour and a flavour kick with each bite.

Method

  1. 1 Combine all ingredients except the oil in a food processor. Blend until mostly smooth.
  2. 2 Use a small cookie dough scoop to gather one heaped tablespoon.
  3. 3 Roll into balls (12–14 total).
  4. 4 Pan-fry 6-8 minutes until golden and browned on all sides.
  5. 5 Serve with sauce, spaghetti, in a sandwich, or over salad.
Serving Suggestion:

Blend chopped tomatoes with PEPPADEW® Roasted Red Peppers to make a quick sauce. Warm, mix with pasta, and serve with the chickpea meatballs.
