  • 2 organic/free-range eggs, room temperature
  • 2 bowls of iced water
  • 7 oz long-stem broccoli, trimmed and chopped
  • 2 tbsp canola oil
  • ½ cucumber
  • 1 tbsp honey or maple syrup
  • 1 small shallot, finely chopped
  • 2 tbsp apple cider vinegar
  • 5–6 PEPPADEW® Sweet Juanita Piquanté Peppers (per poke bowl), whole
  • 1 tbsp Dijon mustard
  • ½ small cabbage, shredded
  • 3.5 oz baby spinach
  • 1½ ripe avocados, sliced
  • White sesame seeds
  • 4 spring onions, sliced
  • 1 tbsp pumpkin seeds
  • Sea salt and freshly ground black pepper, to taste

This poke bowl is low in calories, easy to prepare, rich in protein, and packed with healthy fats. The apple cider vinegar dressing adds polyphenols, detox benefits, and blood sugar balance. With a mix of fresh vegetables, condiments, proteins, seeds, and the bold flavor of PEPPADEW® Sweet Juanita Piquanté Peppers, this is a quick and healthy lunch you'll want to make again and again.

Method

  1. 1 Prepare a bowl of iced water. Bring a pan of water to a boil. Add the eggs and cook for 6 minutes until whites are set but yolks remain runny.
  2. 2 Remove eggs, cool under running water, then transfer to iced water. Peel, halve, and set aside.
  3. 3 Prepare another bowl of iced water. Steam broccoli for 5–6 minutes, then chill in iced water. Dry on paper towels.
  4. 4 Make the dressing: whisk canola oil, apple cider vinegar, Dijon mustard, and honey (or maple syrup). Season with salt and pepper.
  5. 5 Assemble the poke bowl: baby spinach, shredded cabbage, diced cucumber, shallots, broccoli, spring onions, and PEPPADEW® Sweet Juanita Piquanté Peppers.
  6. 6 Add sliced avocado sprinkled with sesame seeds, two egg halves, and garnish with pumpkin seeds. Drizzle with dressing and enjoy!
