  • 2 large vine tomatoes, chopped
  • 1 large garlic clove, crushed
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 2 tbsp fresh basil, shredded
  • Salt and freshly ground black pepper, to taste
  • 2 Greek-style flatbreads
  • 6 PEPPADEW® Yellow Piquanté Peppers, drained
  • 12 black olives
  • 2 oz feta cheese, crumbled
  • 1.5 oz mozzarella cheese, grated
  • Garnish: Fresh basil or oregano

A Mediterranean-inspired flatbread topped with a rich tomato base, tangy feta, creamy mozzarella, and sweet PEPPADEW® Yellow Piquanté Peppers. Perfect for a quick lunch or light dinner!

Method

  1. 1 Preheat oven to 400°F.
  2. 2 Mix chopped tomatoes, crushed garlic, and tomato paste. Stir in oregano, basil, and seasoning.
  3. 3 Place flatbreads on a baking tray. Spread tomato mixture, then top with Yellow Piquanté Peppers, olives, feta, and mozzarella.
  4. 4 Bake for 8–10 minutes until cheese melts and begins to brown.
  5. 5 Garnish with fresh basil or oregano and serve hot or cold.
