Creamy Sausage PEPPADEW® Juanita Piquanté Pepper Pasta

Ingredients
1 jar PEPPADEW® Sweet Juanita Piquanté Peppers
2 tbsp fennel seeds
1 tbsp sea salt
1 tsp black pepper
1 tsp smoked paprika
1 lb Italian sausage meat
1 tbsp olive oil
4 garlic cloves, minced
1 red onion, diced
8 oz rigatoni pasta
1 can chopped tomatoes
2 tbsp honey
3.5 oz mascarpone
Handful baby spinach
½ cup vegetable stock
Handful fresh basil
An easy pasta meal ready in 30 minutes! A garlicky, creamy tomato sauce packed with sweet red piquanté pepper Italian sausage, tossed with rigatoni and spinach. The ultimate comfort food.
Method
1 Chop half a jar of PEPPADEW® Sweet Juanita Piquanté Peppers. Mix with fennel seeds, sea salt, and black pepper.
2 Add smoked paprika to sausage meat, combine well, and set aside.
3 Heat olive oil in a large skillet over medium heat. Add two minced garlic cloves and diced onion. Cook until onions are translucent.
4 Break sausage into small pieces, add to pan, and sauté until cooked through.
5 Cook rigatoni in salted boiling water according to package directions. Drain and set aside.
6 In a new pan, add chopped tomatoes, remaining garlic, and honey. Bring to a boil, then stir in mascarpone and baby spinach. Let spinach wilt, then add vegetable stock.
7 Add cooked sausage and simmer briefly. Stir in rigatoni. Garnish with whole PEPPADEW® Sweet Juanita Piquanté Peppers and fresh basil.
