  • 1 jar PEPPADEW® Sweet Juanita Piquanté Peppers
  • 2 tbsp fennel seeds
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 lb Italian sausage meat
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 red onion, diced
  • 8 oz rigatoni pasta
  • 1 can chopped tomatoes
  • 2 tbsp honey
  • 3.5 oz mascarpone
  • Handful baby spinach
  • ½ cup vegetable stock
  • Handful fresh basil

An easy pasta meal ready in 30 minutes! A garlicky, creamy tomato sauce packed with sweet red piquanté pepper Italian sausage, tossed with rigatoni and spinach. The ultimate comfort food.

Method

  1. 1 Chop half a jar of PEPPADEW® Sweet Juanita Piquanté Peppers. Mix with fennel seeds, sea salt, and black pepper.
  2. 2 Add smoked paprika to sausage meat, combine well, and set aside.
  3. 3 Heat olive oil in a large skillet over medium heat. Add two minced garlic cloves and diced onion. Cook until onions are translucent.
  4. 4 Break sausage into small pieces, add to pan, and sauté until cooked through.
  5. 5 Cook rigatoni in salted boiling water according to package directions. Drain and set aside.
  6. 6 In a new pan, add chopped tomatoes, remaining garlic, and honey. Bring to a boil, then stir in mascarpone and baby spinach. Let spinach wilt, then add vegetable stock.
  7. 7 Add cooked sausage and simmer briefly. Stir in rigatoni. Garnish with whole PEPPADEW® Sweet Juanita Piquanté Peppers and fresh basil.
